Oatmeal Breakfast Bars



1/4 cup honey

1/4 cup pure maple syrup

1/4 cup coconut oil, softened (plus some additional for coating the baking dish)

1/2 cup unsweetened almond or coconut milk

2 eggs

1 tsp. vanilla

1/2 cup unsweetened almond butter

1/4 tsp. sea salt

1 tsp. cinnamon

3/4 cup unsweetened shredded coconut

1/2 cup chopped pecans, optional

2 1/2 cups rolled oats

1/4 cup almond flour


Preheat oven to 350 degrees

Prepare a 9″ x 13″ baking dish by coating it with coconut oil

In a medium sized mixing bowl cream the honey, maple syrup and coconut oil.

Add in the milk, eggs, vanilla, and almond butter and cream together.

Add in the salt, cinnamon, 1/2 cup of the shredded coconut, 1/4 cup of the chopped pecans, oats and almond flour.

Spread dough into prepared baking dish and sprinkle with the remaining coconut and chopped pecans.

Bake for about 15-18 minutes.
