Pear Cranberry Salad

This salad makes a perfect addition to any holiday occasion.

Pear Cranberry Salad

3 cups baby spinach

3 cups mixed field greens

½ red onion, thinly sliced

2 ripe pears, cored and cubed

6 oz. crumbled feta cheese (omit for dairy free)

½ cup dried cranberries, unsweetened

1 cup caramelized pecans  or ½ cup Roasted Pumpkin Seeds 

¼½ cup Cranberry Vinaigrette 


Prepare caramelized pecans or pumpkin seeds, allow to cool before adding to salad.

In a large serving bowl combine the spinach, field greens, onion slices, prepared pears, feta cheese, cranberries, caramelized pecans or roasted pumpkin seeds, toss together.

Gently toss in Poppy Seed or Cranberry Vinaigrette, serve immediately.
