Steel Cut Oat and Apple Pancakes

2 1/2 cup unsweetened almond milk

2 cups steel cut oats

1/4 cup hemp hearts

1 whole apple, quartered and seeded

2 eggs

1/2 tsp. sea salt

2 Tbsp. coconut oil, softened

1 tsp. vanilla

1 tsp. cinnamon

1/4 tsp. nutmeg

1 Tbsp. baking powder

Instructions

In a high powered blender add the almond milk, steel cut oats, apple and hemp hearts.

Blend on high speed for 2 minutes.

Add in the eggs, sea salt, coconut oil, vanilla, cinnamon and nutmeg.

Blend, pulsing for about 30 seconds.

Add in the baking powder and pulse 2-3 times until it is mixed into batter.

Allow batter to sit while you warm a griddle to medium heat.

Coat griddle with coconut oil and pour 1/4 cup batter on griddle for each pancake.

Flip pancakes once bubbles start to form. Allow other side to brown.

Enjoy topped with butter and pure maple syrup or fresh berries.
