Summer Salad Round-Up

Summer has arrived! I love soaking up the warm sunshine, feeling the cool evening breeze and enjoying dinner on the patio. Summer brings lots of opportunities to entertain guests, travel to family picnics, and gather together to enjoy delicious seasonal foods.
I have gathered some of my favorite salad recipes that will hit the spot on a hot day or be a real crowd pleaser at your next barbecue.

Beet Jicama Carrot Salad

Raw beets, carrots and jicama make this salad a crispy, sweet, and refreshing way to eat your veggies. This is one of my favorite side dishes to eat with a lettuce wrapped burger!

Watermelon Salad

If I needed to describe what summer tasted like this salad would definitely fit the bill. Two of my favorite summertime foods are watermelon and tomatoes mix them together, I know if sounds weird, and the results are sweet, crisp, cool, savory, refreshing and satisfying!

Cucumber Cilantro Salad

This is a a fabulous salad. It’s cooling, crisp and has a little bit of a kick! Try this as a side dish to compliment any meal.

Red Potato Salad

This is a creamy delicious potato salad that is full of flavor and good-for-you-ingredients.

Sushi Salad

So this recipe has nothing to do with sushi other than when I tasted it the first thought I had was, “This tastes like sushi!” Maybe it’s not really the taste of sushi but the texture. Try it and see what you think!

Avocado Salad

This salad is super easy just dice, mince, drizzle and toss and you have a delicious main course or a colorful side dish to compliment just about any meal.

Bean Salad

This is a delicious salad that makes a complete meal. It’s loaded with fresh garden veggies, quinoa, beans and just the right seasonings.

These perfectly paired ingredients make a deliciously refreshing summer evening meal. Especially when you add in the fresh made Peach Vinaigrette.
