“Sushi” Salad

So this recipe has nothing to do with sushi other than when I tasted it the first thought I had was, “This tastes like sushi!” Maybe it’s not really the taste of sushi but the texture. Try it and see what you think!
This salad is full of awesome nutrients and is perfect to eat alone or if you’re really in the mood for some sushi. Eat it with some brown rice and seared tuna.

Cucumber: Helps relieve symptoms of bloating and has anti-inflammatory properties as well as many other health promoting properties.

Avocado: An excellent source of healthy fats including oleic acid. Oleic acid is rich in antioxidants that help remove toxins from the body, helps boost memory and immune function and increases cardiovascular health.

Cilantro: Cilantro has been used for centuries because of its powerful medicinal properties. Traditionally it has been called the anti-diabetic plant because it helps to stimulate the secretion of insulin and lowers blood sugar. It has been used for its anti-inflammatory qualities and recent studies are showing promise that is has cholesterol-lowering effects. The oils found in the leaves have nine specific antimicrobial properties. Studies have found it to be a potent antibiotic effective at combating salmonella.

Mango: The tartaric acid, malic acid, and a trace of citric acid found in the fruit help to maintain the optimal pH of the body. One mango supplies as much as 25 percent of the needed daily value of vitamin A. Vitamin A helps promote healthy eyes.

Raw Honey: Naturally has antibacterial, antiviral and anti-fungal properties.

Bragg’s Liquid Aminos: This natural soy sauce alternative is made from certified non-GMO soybeans and contains 16 essential and non-essential amino acids.

“Sushi” Salad

Ingredients

Scale

For the Dressing:

Zest and juice of 1 lime

2 Tbsp. Olive oil

1 Tbsp. Rice vinegar, unsweetened

1 tsp. raw honey

1 Tbsp. Liquid Aminos

1/4 tsp. red pepper flakes

For the Salad:

1 English cucumber, diced

2 mangos, diced

1 avocado, diced

1/4 cup cilantro, minced

Instructions

In a small bowl whisk together the ingredients for the dressing.

Prepare the cucumbers, mangos, avocado and cilantro.

Toss in the dressing.
