Yummy Pancakes

Ingredients

3/4 cup oat flour*

3/4 cup brown rice flour

2 Tbsp. flax meal*

1 1/2 tsp. baking powder

1/4 tsp. sea slat

1 Tbsp. coconut flour

1 egg

2 Tbsp. unsweetened applesauce

1 Tbsp. raw honey

1 Tbsp. coconut oil, melted (plus additional to coat pan)

1 cup + 2 Tbsp. milk, unsweetened almond or coconut

Instructions

In a mixing bowl combine the oat flour, brown rice flour, flax meal, baking soda, salt and coconut flour.

Stir together to mix well.

In another bowl combine the egg, applesauce, honey, melted coconut oil and milk.  Whisk together.

Pour liquid mixture into dry ingredients and stir until thoroughly blended together.

Preheat skillet on medium low heat.

Generously grease skillet with additional coconut oil.

Pour 1/4 cup batter for each pancake and spread out into small circles with a spoon if necessary.  Turn when edges are firm and bubbles begin to form in the center.  Cooke a few minutes on the other side.

Serve with fresh berries or pure maple syrup.

 

Notes

*You can grind oats to make oat flour and flax seed into flax mill by using a coffee grinder.
