Delectable Flourless Chocolate Cake

Ever since I’ve been eating gluten free I have often missed the deliciousness of chocolate cake. One evening while my husband and I were out on a date we had the pleasure, and I mean pleasure of enjoying a slice of flourless chocolate cake with vanilla bean ice cream and berries on top. From that moment I couldn’t rest until I had created that goodness in my own kitchen.
I’m happy to tell you that now you can enjoy this delectable flourless chocolate cake too!

Delectable Flourless Chocolate Cake

Ingredients

1/4 cup butter

2 oz. bakers chocolate, broken into pieces

1/4 cup cacao powder

1/4 cup coconut sugar or sucanat

2 eggs

Instructions

Preheat oven to 350 degrees.

Prepare two 8 oz. ramekins by greasing them with butter.

In a double boiler* over medium heat combine the butter and bakers chocolate and stir until melted.

In a small mixing bowl combine the cacao powder and sugar together.

Add the eggs into the cacao and sugar mixture and whisk until thoroughly combined.

Equally pour mixture into prepared ramekins.

Bake for 30 minutes. Remove from oven and allow to cool for 15-20 minutes.

Top with a scoop of So Delicious Vanilla Bean ice cream and fresh berries.

*Create your own double boiler by using a small sauce pan and a glass bowl. Place a small amount of water in the sauce pan. Allow the water to come to a boil, then turn off the heat. Place the butter and bakers chocolate in the glass bowl and put the glass bowl into the sauce pan. Stir ingredients until the melt together.
