Yellow Rice Pilaf

Yellow Rice Pilaf

Ingredients

Scale

1½ cups Basmati brown rice

2½ cups water

1 tsp. sea salt

1 bay leaf

2 Tbsp. butter or coconut oil

1 large clove garlic, minced

1 Tbsp. fresh ginger, peeled and minced

1 tsp. dried turmeric

¼ tsp. dried thyme

¼ cup pine nuts, coarsely chopped (optional)

Zest from 1 lemon

½ cup dried cranberries

¼ cup fresh cilantro, minced

Instructions

Prepare the Rice:

Preheat oven to 375°. In a medium sauce pan add the water and bring to a boil. Remove from heat and stir in 1 Tbsp. butter or coconut oil and sea salt.

Place rice and bay leaf in an 8”x 8” baking dish. Pour the boiling water over the rice. Cover baking dish with foil and bake in the oven for 1 hour.

 

While rice is cooking prepare the seasonings:

In a small frying pan over low heat melt the remaining 1 Tbsp. butter or coconut oil.

Sauté the garlic and ginger. Stir in the turmeric, thyme and pine nuts. Sauté until the nuts begin to brown.

Remove from heat and toss in the lemon juice and cranberries.

When rice is finished remove from oven and fluff with a fork. Stir in the seasoning mixture and toss in the fresh cilantro.
